I’ve always believed that part of running a business is about social conscience, and never more so than last night when I read about the Level 4 lockdown and the changes to Christmas.  This discount is to help to bring some cheer during a time when the nation’s Christmas plans have been ruined, to find a way to connect to new friends all over the world, and a chance to learn something new that goes well beyond January’s new years resolutions.

Helping to connect

Learning about making sourdough is so calming and therapeutic. My focus on sourdough over the past year has been on the connection between baking and mental health, and the focus in the Sourdough Club forum is on helping to support people that really need it right now, with bread and friendship, and so that’s exactly what I’m going to do. The Club pages are a way to attend the Sourdough School virtually and hang out with me without leaving your kitchen, and yet be part of a community. In light of the current situation I feel it is only right to make this amazing resource as accessible as possible, so if you have been separated from your family this Christmas I am inviting you to join our sourdough family – I am going to give out 50 discount codes for  75% off the joining fee of our Monthly subscription, over the next 48 hours.

How much will it cost me to join?

The normal Monthly subscription option is £99 joining fee to set you up and then just £9.99 per month thereafter, however we are issuing discount codes for a 75% discount off the joining fee making it just £24.75 to join for one month and then £9.99 for each additional month – all that we then ask is that you remain a member, join the forum and follow the lessons for 3 months. 

More than just big holes

It’s more important now than ever to find a way to connect with others, especially for people who are self-isolating, are away from their family over Christmas or people who are vulnerable. Our Sourdough Club is very active online – with an interactive forum, events and conversations and encouragement  – we are a community. All of my course content, research, recipes and more go onto this platform. I’ve filled it with video masterclasses and articles answering every question you could possibly have about sourdough. Beyond that, I’ve shared my passion and knowledge from studying my PhD in Bread and Digestion. There are many articles, research papers and formulae specifically focused on how sourdough and inclusions can help boost our immune system and support our gut health. Right now, this knowledge is more valuable than ever. We need to look after ourselves, our loved ones and those around us.

I wish I could share all of this knowledge with everyone for free right now, but as a small business in this very challenging time, I have to ensure I am at the very least covering overheads so that I can continue. On Thursday, we'll be sharing our coffee gibassier recipe with @SourdoughClub members. This delicious, sweetened bread from the south of France is made using olive oil instead of butter. It is usually flavoured with orange peel and anise, but my version is a coffee gibassier.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Surprisingly, coffee can be good for the gut (in sensible amounts). It can help reduce stress in healthy individuals, and could protect the brain from age-related mental deterioration and inflammation. There are studies showing that coffee can lower the risk of type 2 diabetes and may also increase the activity of probiotic Bifidobacteria in the gut.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Tips for using Walnuts in Sourdough⁣.⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
“Growing up in the Dordogne I practically lived off walnuts. They grow everywhere. I planted a walnut tree in the garden when we arrived... in fact, my father in law gave it to us. It’s not big enough to produce more than 4 walnuts a year yet, but I have high hopes.⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
There are a few human clinical intervention trials that show a heart-healthy diet with walnuts can lower blood cholesterol levels and they are delicious, however as an inclusion on your bread and one of the drawbacks of using walnuts in sourdough is that they have natural chemical, juglone, which demonstrates antiviral, antibacterial, and antifungal activities, and it is strongest when the nuts are at their freshest and most delicious. It makes sense really - they want to sprout and turn into a tree not become food for fungus... or us for that matter…⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
So the best tip I can share is to add them in later.  This way your micro-organisms – i.e. the yeast and the lactic acid bacteria have had plenty of time to develop and adding them in later will not disrupt the gluten structure.⁣”
