Eating Symbiotically

Much of our approach with BALM is inspired by the time-honoured traditions and dietary practices found in the world's Blue Zones, particularly those influenced by the Mediterranean lifestyle. These regions are renowned for their long-lived populations and their diets rich in plant-based foods, which we aspire to recreate with our own baking practices.

Throughout the season, we encourage you to eat symbiotically; we don't just teach you to bake bread. Baking as lifestyle medicine is about more than just fermenting your bread, and getting big holes...  we look at the way you eat and share bread as a holistic incorporate this approach into your diets. The answer to maintaining digestive health is understanding your body and what it needs to function, then applying this knowledge in a way that becomes how you live. It is about eating to optimally nourish your gut microbiome and balance blood sugars, but it is also about connecting to yourself and your community, and living life with purpose. We use an evidence-based approach BALM Protocol
