There are many reasons why people bake sourdough: it is easier to digest, more nutritious and absolutely delicious. However, it has a reputation for being tricky and time-consuming. The traditional beautiful boule is iconic, but it is demanding, and most people do not have the skills or time to makes bread like this, especially during the working week.

This book is about making sourdough that fits in with real life: how to incorporate that long, slow fermentation into everyday bakes with just 10 minutes of active work, so that people can actually bake and enjoy the most delicious bread in the world.

10-Minute Sourdough follows a year of recipes at the Sourdough School.  The academic year starts in the autumn with the new harvest. The recipes include tin loaves, cakes, focaccia-style loaves that make delicious suppers and simple pizza, as well as several celebration recipes.

The book includes observations about each recipe, and thoughts about the seasonal ingredients.

Each recipe can be made over 36 hours but with just 10 minutes’ actual work in total (excluding baking time).

We try and encourage our students to experiment with different inclusions to their sourdough, to add flavour, texture and nutrition. To help them do this, we have an 'ingredients library' with nutritional information about different ingredients, with links to studies and recipes. These ancient seeds have been used by many civilisations through time since the Egyptians, Minoans and Sumerians. Still popular in Eastern bakery, the poppy seed is a beautiful addition to many sweet pastries and cakes. 

They are a rich source of tocopherols that the body can turn into vitamin E, vitamins B1, B3 and B5 as well as calcium and potassium. They are also a source of linoleic acid, an essential polyunsaturated fatty acid, used by the body to make important substances like prostaglandins and inflammation mediators. Some research even indicates that poppy seeds may help prevent some types of cancer.
