We thought it would be lovely to share and give away some of the things that we use all the time with our members.

Challenger Bread Pan Sourdough

We’d love to introduce you to Challenger Breadware, founded by Jim Challenger who began baking in 2016, and, as bakers do, became obsessed with baking the perfect loaf. What started out as an expression of love—making healthy food for his family—grew into a commitment to learning the craft of baking bread. Challenger Breadware grew out of Jim’s daily baking practice, and his personal goal to help more people bake better and eat more healthfully, one delicious loaf at a time.

If you have had the pleasure of visiting the school in person or hope to soon, then you’ll probably have seen one of Challenger Breadware’s beautiful Bread Pans in the kitchen.

We are absolutely delighted to be able to give our club members the opportunity to bake some of the recipes and formulas on The Sourdough Club using one of these Challenger Bread Pans.

THE PRIZE

We’ve partnered with Challenger Breadware to giveaway 1 x Challenger Bread Pan worth $295

The Challenger Bread Pan is a unique cast iron bread pan specifically designed to create the ideal baking environment for all your loaves, even in a conventional home oven. The dimensions of this pan allow you to bake a wide range of loaves – bâtards, boules and baguettes – all fit very comfortably. Easy to load, the pan helps to keep a constant temperature and traps steam around the dough as it bakes.

We’ll pick our favourite loaf (see how to enter below), to receive the Challenger Bread Pan.

Each month we are asking our Sourdough Club members to bake a loaf and share a photo of it with us, we’ll pick our favourite loaf to win our prize from that month’s partner.

There are two ways you can enter:

  • Share a photo of your sourdough loaf on Instagram and ensure to tag @sourdoughclub, #sourdoughclub and #sourdoughclubgiveaway – you must use all these tags so we can find your entries!

OR

  • Upload a photo of your sourdough loaf below.

You must be a member of The Sourdough Club to qualify for this prize.

You may enter as many times as you wish every month. We’ll only consider entries made between the first and last day of each month to win the prize we’ve selected from one of our partners.

Whilst we want to offer our prizes globally, some of our partners may be limited to the countries they are able to post to through the UK delivery system. We’ll inform you of this each time we announce our partner of the month. This particular competition is open worldwide.

This competition closes at midnight on the last day of the month – May 31st 2020.

Entrants must be aged 18 or over.

On Thursday, we'll be sharing our coffee gibassier recipe with @SourdoughClub members. This delicious, sweetened bread from the south of France is made using olive oil instead of butter. It is usually flavoured with orange peel and anise, but my version is a coffee gibassier.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Surprisingly, coffee can be good for the gut (in sensible amounts). It can help reduce stress in healthy individuals, and could protect the brain from age-related mental deterioration and inflammation. There are studies showing that coffee can lower the risk of type 2 diabetes and may also increase the activity of probiotic Bifidobacteria in the gut.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Tips for using Walnuts in Sourdough⁣.⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
“Growing up in the Dordogne I practically lived off walnuts. They grow everywhere. I planted a walnut tree in the garden when we arrived... in fact, my father in law gave it to us. It’s not big enough to produce more than 4 walnuts a year yet, but I have high hopes.⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
There are a few human clinical intervention trials that show a heart-healthy diet with walnuts can lower blood cholesterol levels and they are delicious, however as an inclusion on your bread and one of the drawbacks of using walnuts in sourdough is that they have natural chemical, juglone, which demonstrates antiviral, antibacterial, and antifungal activities, and it is strongest when the nuts are at their freshest and most delicious. It makes sense really - they want to sprout and turn into a tree not become food for fungus... or us for that matter…⁣
⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
So the best tip I can share is to add them in later.  This way your micro-organisms – i.e. the yeast and the lactic acid bacteria have had plenty of time to develop and adding them in later will not disrupt the gluten structure.⁣”
