The Sourdough School – Hand Carved Wooden Spatula

One of the biggest issues around using a wooden spoon to mix sourdough is that often you are mixing a lower hydration initially, on the first mix. The problem with this is that you need some real strength. So several years ago I talked to my dear friend EJ about developing a wooden spoon that was more like a spatula but had an ergonomic design to fit to the size and strength of mixing dough in a bowl. And he came up with this very beautiful curved hand carved wooden spatula. EJ is very sadly no longer with us. A friend of EJ’s has recently and very kindly agreed to continue to make these beautiful hand carved utensils for us, in remembrance of EJ.

Our hand carved wooden spatula has beauty. It has strength. And somehow the flat edge really is a fantastic design that allows you to get right up against the edge of the bowl, to mix all of the water and all of the flour together. Baking is always a joy but it is even more joyful when you are using tools that are ergonomically designed and fit for purpose but also handmade lovingly by someone who has that same creative streak in them, using sustainable and ethical wood. As with all my tools I believe that part of the joy of baking is in picking up something you are deeply familiar and getting that sense of familiarity as you do something you love to do.

The first time that I met EJ of Hatchet + Bear was through his wooden spoon carving. He made these exquisite handmade wooden tools. And for someone like me who is using wooden spoons constantly they were something very beautiful and useful. Combine those two things and you have my heart!
