The Sourdough School – Hand Carved Wooden Lame

One of the biggest issues around using a plastic lame to score sourdough of course is that eventually the blade will become blunt and the lame could either end up in landfill or definitely need recycling.  So several years ago I talked to my dear friend EJ about developing a lame with a replaceable blade. And he came up with this very beautiful hand carved wooden lame.

The first time that I met EJ of Hatchet + Bear was through his wooden spoon carving. He made these exquisite handmade wooden tools. And for someone like me who is using wooden spoons constantly they were something very beautiful and useful. Combine those two things and you have my heart.

This is a handmade ethically sourced hand carved wooden lame that was originally made for us by EJ of Hatchet + Bear who put as much love into his craftsmanship as I do into my sourdough. I think they go together very beautifully. Very sadly EJ is no longer with us. Recently a friend of EJ’s who is also a wood turner and carver offered to make these again for us as in remembrance of our dear friend.

Our hand carved wooden lame is a beautiful object to have in the kitchen, as well as being extremely functional. Some of our customers comment that they want to have it on display, rather than tucking it away in a drawer. The handcrafted, black walnut handle is a pleasure to hold, and the attractive metal fittings make changing the blade quick and easy. I love using this lame. It’s lightweight but sturdy, and makes smooth, clean cuts in the dough.

When I first started baking, in a small family-run bakery in the south of France, we used a simple, naked blade to make cuts in the top of the loaves before they were loaded into the oven. There are many bakers who will tell you that this is all you need, but a lot of home bakers prefer to use a blade with a handle… there’s less risk of cut fingers that way. This beautifully crafted, wooden handled lame that should last a lifetime of baking.
