For me a bagel has to be toasted, but still chewy, the cream cheese cold and the smoked salmon must have a light oaken aroma about it. I think that these bagels are possibly the best I've ever had. The nigella seeds add a unique flavour to them. The flavour of nigella has been described as similar to oregano with onion and black pepper.
