This is the method I use the most when I am baking for my family. I affectionally call it cheats sourdough, but it is known as Do Nothing and it is quite literally that .. mix leave, shape, prove and bake and it turns out a superb loaf. It is also the method I suggest to anyone who has finds stretching and folding challenging. The shaping in the morning needs to be firm but light and don't be tempted to over handle it. Be firm but gentle in your shaping, as you don't want to knock out all the air.
