We use the Marcato Atlas 150 Pasta Machine here at the Sourdough School to make our diversity sourdough pasta recipes for the Sourdough Club. Vanessa’s other sourdough pasta recipes can be found in her sourdough recipe books. We make our sourdough pasta either with a blend of white and wholegrain flour for extra fibre and nutritional benefits, or with our Botanical Blend flour in place of the wholegrain for diversity.
