Follow the mill manufacturer’s instructions for milling – we recommend using a Mockmill.

Ingredients

  • 700g blend no 2
  • 80g Rye
  • 80g Khorasan
  • 20g cocoa nibs
  • 1-inch cinnamon stick
  • 10g coriander seeds
  • 15 black beans
  • 4 cloves
  • 4 allspice
  • 1 tablespoon of toasted wheat germ (toasted at the time of milling)
  • Optional grate some fresh nutmeg in & 1/2 teaspoon ginger powder
