By using whatever herbs are in season, you can make this fresh, vibrant and versatile paste almost all year round, particularly if you can keep a few things growing in pots on a sunny windowsill...Pesto is ideal to serve with hunks of cheese and thick slices of sourdough, or as a pizza topping in place of our tomato sauce, or stirred into soup. I especially love this in my cannelloni bean soup...
