Anthocyanidins are types of polyphenols found in plants that are usually blue-purple in colour. This beautiful blue botanical blend includes blue barley, blue corn, cornflowers and lavender. Polyphenols are powerful antioxidants that are known to have many potential health benefits.

Follow the mill manufacturer’s instructions for milling – we recommend using a Mockmill. We use the Mockmill Pro 200 at the school for faster milling, however Mockmills most affordable model the Mockmill 100 is also ideal.

Ingredients
- 700g Blend No 2
- 200g blue barley or black emmer
- 100g blue corn
- Cornflowers - 20 heads
- 8g toasted fennel seeds (toasted at time of milling)
- 2 tablespoons black tea
- 30g cocoa beans
- 7 black pepper corns
- 10g mustard seeds
- 1 tablespoon dried angustifolia lavender such as Hidcote or Munstead
- 30 heads butterfly pea flowers or mallow flowers- these are not always local or easy to buy organically but add a real pop of colour and polyphenols (optional)
